Tonight was another quesadilla night, but I decided to make something different (rather than my usual chicken and cheese). I threw together all the cheeses in my fridge (cheddar, monterey jack, manchego, and feta) to create an amazing quesadilla! If you have never heard of manchego, I am sorry you are missing out such a heavenly creation. Go buy some immediately. It is the best thing you will ever taste (except for potatoes, that is).
These quesadillas were utterly scrumptious. They were also painless to make. I piled some shredded cheddar and monterey jack, sliced manchego, and crumbled feta onto a tortilla, folded it in half, and fried it up.
The end result–mouthwatering melted cheese in a crispy golden tortilla.
