- Food: Bacon and Potato Potpie
- Ingredients: bacon, potato, pie crust, cream, thyme, puff pastry, salt and pepper, swiss cheese
- Prep time: 1 hour
- Cook Time: 1 hour
The first step in making is to cook the bacon and warm the cream. Put a few sprigs of thyme and 1.5 cups of cream in a small sauce pan. Bring the cream to a low simmer, then reduce the heat and let the thyme steep while you chop up the potatoes.
Now it’s time for the fun part: assembling the pie! Layer the potatoes and cover each layer with cream, crumbled bacon, and salt and pepper. You should get about 4 layers of potatoes. Afterward, top the potatoes with a half cup of grated Swiss cheese.
For the top, roll out puff pastry into a circle big enough to cover your pie.
Cover the pie, crimp the edges, and brush with egg wash.
Bake at 375 degrees for at least an hour. If the edges of your crust start to burn (ours did), cover them with tin foil.
Final step: remove pie from over, slice, and devour!
We also made a chicken and apple pot pie. Maybe someday we will tell you how it went…
